This is a next-level BEC that balances smoky-crunchy bacon, melty cheese, a runny (or fried) egg, and the sweet-heat punch of hot honey. “Bee Dolce” is the name we’re giving this masterpiece because the hot honey makes it taste like luxury.
Ingredients (Makes 1 Monster Sandwich)
- 1 large brioche bun, sesame seed roll, or everything bagel (brioche is the move)
- 4–5 thick-cut bacon strips (applewood-smoked if possible)
- 2 large eggs
- 2 slices sharp cheddar or American cheese (sharp cheddar wins for flavor)
- 2–3 tablespoons hot honey (Mike’s Hot Honey, Bee Dolce, or homemade – see note)
- 1 tablespoon unsalted butter (for the eggs + bun)
- Pinch of kosher salt & fresh cracked pepper

Instructions
- Cook the bacon
Medium heat in a skillet or on a sheet pan in the oven (400 °F / 15–18 min) until deep golden and crispy. Drain on paper towels. Keep 1 tbsp bacon fat in the pan. - Toast the bun
While bacon cooks, split and butter the cut sides of the brioche bun. Toast in a dry skillet or under the broiler until golden. - Cook the eggs (choose your style)
Fried (runny yolk): Heat the reserved bacon fat + ½ tbsp butter over medium-low. Crack in 2 eggs, season with salt & pepper. Cook until edges are lacy and crispy, yolk still runny (2–3 min).
OR
Over-easy: Same, but flip gently for 20–30 seconds. - Melt the cheese
Immediately top the eggs with the cheese slices while still in the pan so it melts perfectly over the yolks. -
Assemble (bottom to top)
- Bottom bun (buttered side up)
- Optional swipe of garlic aioli
- Crispy bacon strips
- Cheesy eggs
- Generous drizzle of hot honey (don’t be shy – 2–3 tbsp)
- Optional pickled jalapeños + handful of arugula
- Top bun
- Press gently so the yolk and hot honey start to mingle, wrap in parchment or foil for 60 seconds (makes it even juicier), then devour immediately.
